Whiskey Terminology Glossary

Every term you'll encounter in the world of whiskey โ€” from mash bills to angel's share, Coffey stills to Mizunara oak. Search, browse, or jump by letter.

A
Age Statement
Legal

The number of years printed on a whiskey label indicating how long the spirit was matured in oak. Crucially, the age on the label refers to the youngest whiskey in the bottle โ€” a 12-year Scotch may contain older components but not a single drop younger than 12 years. Many premium whiskies carry No Age Statement (NAS) and only guarantee the legal minimum.

Angel's Share
Science

The volume of whiskey that evaporates through the barrel staves and is lost to the atmosphere during aging. In Scotland, approximately 1โ€“2% of the barrel's volume evaporates per year. In tropical climates (India, Taiwan), this can reach 8โ€“15% annually, dramatically reducing the amount of aged spirit available โ€” but also concentrating flavor much faster.

B
Backset (Setback)
Process

The spent liquid (stillage) left over after distillation, used in the sour mash process. A portion is added to the next batch's fermenter to regulate pH, inhibit wild bacteria, and create consistency of flavor across batches. Standard practice in bourbon production.

Barrel Entry Proof
Legal

The proof (ABV) at which new-make spirit is placed into the aging barrel. For bourbon, U.S. law mandates a maximum of 125ยฐ proof (62.5% ABV). Distillers dilute the spirit with water before barreling to reach this target. Higher entry proof produces a lighter whiskey; lower produces more oak extraction and body.

Blending
Process

The art and science of combining multiple whiskey batches or categories to create a consistent or specifically flavored final product. Master blenders at major houses (Johnnie Walker, Jameson, Hibiki) taste and combine dozens or hundreds of component whiskies to achieve a target flavor profile that remains consistent year to year.

Bottled-in-Bond
Legal

A U.S. designation established by the Bottled-in-Bond Act of 1897 โ€” one of the first consumer protection laws for alcohol. Requirements: produced at a single distillery in a single distilling season (Janโ€“Jun or Julโ€“Dec), aged at least 4 years in a federally bonded warehouse, and bottled at exactly 100ยฐ proof (50% ABV). No coloring or additives permitted.

C
Cask Finish
Process

A secondary maturation period in which whiskey (already aged in its primary cask) is transferred to a different type of cask โ€” typically ex-sherry, ex-port, ex-wine, ex-rum, or Mizunara oak โ€” to acquire additional flavors. Duration can range from a few months to several years. Popularized by Glenmorangie (1994) with their Madeira wood finish.

Cask Strength
Legal

Also called "barrel proof" โ€” whiskey bottled without any dilution after exiting the barrel. The ABV reflects the barrel's natural concentration, typically ranging from 55% to 70%+ ABV. Provides the most intense, unadulterated expression of a distillery's character. Consumers can add water to taste.

Char
Process

The burning of the inside surface of a new oak barrel to a specified depth. Required for bourbon barrels (new charred oak). Char levels run from #1 (light) to #4 ("alligator char" โ€” so named for the pattern of the deeply charred surface). The char layer acts as a filter for harsh compounds and a source of vanilla, caramel, and sweet oak flavors.

Coffey Still
Equipment

A specific type of continuous column still invented by former Irish excise officer Aeneas Coffey in 1831. It allows continuous distillation to high proof and became the backbone of Scotch grain whisky and Irish grain whisky production. Despite being invented by an Irishman, the Irish whiskey establishment rejected it โ€” Coffey moved to Scotland, where it transformed the industry.

Column Still
Equipment

Also called a "continuous still" or "patent still." A tall industrial distillation apparatus that allows continuous rather than batch distillation, producing spirit at higher ABV (often above 90%) more efficiently than a pot still. Used for American grain whiskies, Scotch grain whisky, Canadian base whisky, and Japanese grain whisky.

Congeners
Science

Chemical compounds other than ethanol produced during fermentation and distillation, including esters, aldehydes, fusel alcohols, and acids. Congeners are responsible for the vast majority of a whiskey's flavor and aroma. "Good" congeners include fruity esters; "bad" ones (fusel alcohols, sulfur compounds) are removed through careful distillation.

D
Devil's Cut
Science

The whiskey absorbed into the barrel's wood staves during aging โ€” the opposite of the angel's share. While the angel's share evaporates, the devil's cut is locked in the wood. Jim Beam commercializes this concept with their "Devil's Cut" expression, made by adding water to spent barrels and extracting the absorbed whiskey through agitation.

Distillation
Process

The process of heating a fermented liquid (wash) to vaporize alcohol (which boils at a lower temperature than water), then condensing the vapor back into liquid. The resulting distillate is higher in alcohol content than the original wash. Most whiskeys are distilled twice (pot still) or once continuously (column still). Irish pot still is often triple-distilled.

Dram
Tasting

A traditional Scottish and Irish informal measure for a serving of whisky. Not legally defined in terms of volume. In Scotland, a pub "dram" is typically 25ml or 35ml. In casual usage, simply a pour of whisky for drinking. Etymology: from the Greek "drachme" (ancient unit of weight).

E
Enzymes (Amylase)
Science

Natural enzymes present in malted barley that convert starches in grain into fermentable sugars (primarily maltose and glucose) during mashing. This is why most whiskey mash bills include some malted barley even when it is not the primary grain โ€” its enzymes are needed to drive the conversion process.

Esters
Science

Aromatic chemical compounds produced during fermentation when acids react with alcohols. Esters are responsible for many of whiskey's most pleasant fruity and floral aromas โ€” banana, apple, pear, peach, and floral notes. The type and character of esters are influenced by yeast strain, fermentation temperature, and fermentation duration.

F
Feints
Process

The "tails" cut from a pot still distillation run โ€” the last, lower-quality portion of the distillate containing heavier, unwanted compounds (fusel oils, sulfur). Feints from the current run are typically recycled ("feints charged") into the next distillation run along with the foreshots. The quality of the cut between "hearts" and feints significantly impacts spirit character.

Fermentation
Process

The biological process by which yeast converts sugars (from the mashed grain) into ethanol and carbon dioxide. The fermented liquid is called "wash" (or "distiller's beer") with a typical ABV of 7โ€“10%. Fermentation duration (typically 48โ€“96 hours for bourbon; up to 120 hours for some Scotch) significantly impacts the flavor profile of the final whiskey.

Foreshots
Process

The first portion of distillate produced during a pot still distillation run. Foreshots contain the most volatile and harmful compounds including methanol, acetaldehyde, and ethyl acetate. The stillman "cuts" them off and discards them (or recycles to the next run) before collecting the "hearts" (the desirable middle cut).

GI / PGI
Legal

Geographic Indication / Protected Geographic Indication โ€” a legal intellectual property designation that ties a product's name to its geographic origin. Scotch Whisky, Irish Whiskey, and Bourbon are all protected GIs, meaning only products made in their designated regions can carry those names in most jurisdictions. Bourbon's protection is backed by U.S. law and trade agreements.

H
Hearts
Process

The central and most desirable portion of the pot still distillation run โ€” collected between the foreshots (discarded) and feints (recycled). Hearts contain the cleanest ethanol and the most pleasant congeners. The skill of the stillman lies in making precise cuts at exactly the right moment to capture the optimal hearts fraction.

I
IBV (International Bitterness Units)
Science

Not a standard whiskey term, but occasionally used in craft distilleries with beer-making heritage to describe grain bitterness. Note: not to be confused with iodine, which is a characteristic tasting note (not a measurement) in Islay Scotch whiskies, where it describes a medicinal, antiseptic quality.

L
Lincoln County Process
Process

The defining process of Tennessee Whiskey. New-make spirit (before barreling) is dripped or filtered through at least 10 feet of sugar-maple charcoal, mellowing harsh compounds and imparting a subtle sweetness and smoothness. Named for Lincoln County, Tennessee (now Moore County โ€” home of Jack Daniel's Distillery). Required by Tennessee state law (ยง57-2-106) for all Tennessee whiskey except Benjamin Prichard's, which is exempted.

Lyne Arm
Equipment

The angled pipe that carries vapors from the top of the pot still neck to the condenser. The angle of the lyne arm profoundly influences spirit character: an ascending lyne arm forces more vapor to condense back into the still (more reflux), producing a lighter, more delicate spirit. A descending lyne arm allows more vapor to pass through, creating a heavier, more robust spirit.

M
Mash
Process

The mixture of grain, hot water, and (in bourbon production) backset that is cooked and stirred to convert starches into fermentable sugars. The cooked grain mixture is called the mash, and the liquid extracted from it (before or after filtering grain solids) is called the wort or wash, which goes on to fermentation.

Mash Bill
Process

The grain recipe โ€” the specific percentage ratios of different grains (corn, rye, wheat, malted barley) used in fermentation. The mash bill is one of the most important determinants of a whiskey's flavor profile. Distilleries guard their mash bills carefully; some (like Four Roses) use multiple mash bills to create product variety.

Malting
Process

The process of germinating grain (usually barley) by soaking it in water, then allowing it to sprout, which activates the amylase enzymes needed to convert starch to sugar. The germination is then halted by drying (kilning) the grain with hot air โ€” or, in traditional Scotch production, over peat fires, which impart the iconic smoky character of peated whiskies.

Mizunara
Equipment

Japanese oak (Quercus mongolica), one of the world's most prized and expensive cask materials. Porous, difficult to cooperage, prone to leaking โ€” but imparts extraordinary flavors unique to this oak: sandalwood, incense (oud), coconut, and oriental spice. A Mizunara cask can cost 10โ€“20ร— more than an American oak barrel. Primarily associated with Japanese whisky aging.

N
NAS (No Age Statement)
Legal

A whiskey that does not declare an age on the label. The whiskey still meets all legal minimum aging requirements (e.g., 3 years for Scotch) but the producer chooses not to state a specific age. Common reasons include blending whiskies of different ages, shortage of older stock, or a deliberate brand positioning around flavor over age. Not inherently inferior to age-stated expressions.

New Make / White Dog
Process

The clear, unaged distillate as it comes off the still, before any barrel maturation. In Scotland it's called "new make spirit"; in the American South, "white dog" or "white whiskey." New make reveals the pure character of the distillery's process โ€” grain, yeast, and distillation technique โ€” without the influence of oak. Some craft distilleries sell it commercially.

O
Oak
Science

The wood species universally used for whiskey maturation, valued for its porosity, structural integrity, and unique chemical composition. Key flavor compounds extracted from oak include vanillin (vanilla), lactones (coconut), tannins (dryness, astringency), and lignin breakdown products (smoke, spice). The three main oaks are American (Quercus alba), European (Quercus robur/petraea), and Japanese (Quercus mongolica).

P
Peat
Process

Partially decomposed organic matter (ancient compressed plant material) found in boggy ground. When cut and dried, it is burned as fuel to dry malted barley during the kilning stage. The phenolic smoke compounds (guaiacol, cresol, 4-ethylguaiacol) produced by burning peat are absorbed by the wet barley, imparting the characteristic smoky, medicinal, earthy qualities associated with Islay Scotch.

Phenols / PPM
Science

Phenols are the aromatic chemical compounds responsible for peaty, smoky flavors in whisky. Peatiness is measured in Parts Per Million (ppm) of phenols in the malted barley. Unpeated malt: 0โ€“2 ppm. Lightly peated: 5โ€“15 ppm. Heavily peated: 30โ€“50 ppm. "Superpeat" expressions (Bruichladdich Octomore): 100โ€“258+ ppm. Higher PPM does not always mean smokier in the glass, as distillation and maturation reduce phenol levels.

Pot Still
Equipment

A traditional copper distillation vessel used for batch distillation. The wash is heated, vapors rise through the neck, travel down the lyne arm to the condenser, and are collected as distillate. Pot stills produce heavier, more flavorful spirit with more congeners than column stills. Shape matters enormously: tall, thin stills produce lighter spirit (more copper contact, more reflux); short, squat stills produce heavier, oilier spirit.

Proof
Legal

A measure of alcohol content used in the United States, equal to twice the ABV percentage. So 100ยฐ proof = 50% ABV; 80ยฐ proof = 40% ABV; 125ยฐ proof = 62.5% ABV. The term originates from an old British test where gunpowder was moistened with spirit โ€” if it still ignited, the spirit was "proved" to be at least ~57% ABV (British proof). U.S. proof was standardized differently in 1848.

R
Reflux
Science

The process by which some rising vapor in a pot still condenses and falls back into the still, re-distilling itself. More reflux produces lighter, more delicate spirit. It is influenced by still shape (tall stills produce more reflux), lyne arm angle (ascending = more reflux), and condenser type. Worm tub condensers produce less reflux than shell-and-tube condensers, creating heavier spirit.

Rickhouse (Rackhouse)
Process

The multi-story wooden or metal warehouse used to store aging bourbon barrels. Barrels on upper floors experience greater temperature fluctuations (hotter in summer, colder in winter), causing more wood expansion and contraction and thus more flavor extraction. Lower floors age more slowly but often more consistently. Some distilleries rotate barrels between floors; others (e.g., Four Roses) use single-story warehouses for uniformity.

Single Barrel
Legal

A whiskey bottled from the contents of a single, individually selected cask, without blending with other barrels. The barrel number is typically stamped on the label. Because every barrel ages differently, single barrel expressions vary noticeably between batches. No legal ABV requirement in the U.S. beyond standard whiskey minimums.

Single Cask
Legal

The Scotch equivalent of "single barrel" โ€” whisky drawn from a single cask and bottled without dilution or blending. Often bottled at cask strength. The Scotch Malt Whisky Society (SMWS) pioneered the concept of bottling individual single casks and became famous for unusual, independent bottlings.

Solera
Process

A fractional blending system originally from Sherry production, adapted by some whiskey producers. A large vessel (or series of connected barrels) is never fully emptied โ€” only a portion is drawn off for bottling, and it is refilled with younger whiskey. Over time, the youngest portion blends with the oldest. Glenfiddich 15yr uses a solera system. Critics note the age statement becomes ambiguous under this method.

Sour Mash
Process

A production process (standard for all bourbon) where a portion of spent mash (backset/setback) from the previous distillation batch is added to the new fermenter alongside fresh grain, water, and yeast. The acidic backset lowers the pH of the new mash, inhibiting bacterial growth, controlling fermentation consistency, and contributing flavor continuity across batches. Virtually all bourbon is sour mash, even if not labeled as such.

Sweet Mash
Process

Fermentation using only fresh yeast and fresh water โ€” no backset added. Far less common than sour mash. Without the acid control of backset, sweet mash fermentation is more susceptible to wild yeast and bacterial influences, making it less predictable but potentially more characterful. Benjamin Prichard's in Tennessee uses sweet mash.

T
Terroir
Science

A concept borrowed from wine describing the environmental factors โ€” soil, climate, water source, geography, local grain varieties โ€” that contribute to a spirit's flavor. While more debated in whiskey than wine (due to distillation's transformative nature), some producers (particularly Waterford in Ireland and Mackmyra in Sweden) emphasize terroir as a defining characteristic of their products.

Toast
Process

Gentle, controlled heating of the inside of a barrel (without igniting the wood) to caramelize natural wood sugars and break down lignins into vanillin and other flavor compounds. Different from char (which involves igniting the wood). Toasting is used for wine barrels and some whiskey finishing casks, and creates different flavor compounds than charring โ€” particularly more spice and vanilla.

U
Unmalted Barley
Process

Raw, ungerminated barley grain that has not been through the malting process. Key to Single Pot Still Irish Whiskey โ€” which mandates a mix of both malted and unmalted barley in the mash. The unmalted barley (historically used to avoid a British malt tax) contributes a distinctive spicy, oily, creamy texture to the spirit that is unique to the Irish Single Pot Still category.

V
Vatting
Process

The process of combining multiple casks of whisky from the same distillery (or, in blended malt, from different distilleries) into a large vat before bottling, to achieve consistency of flavor. Vatted malts (now legally called Blended Malt Scotch Whisky) were formerly commonly sold. Contrast with single cask / single barrel bottlings.

W
Wash
Process

The fermented grain liquid produced after yeast has converted the mash's sugars to alcohol. Wash is essentially a flat, unhopped grain beer, typically 7โ€“10% ABV. It is distilled to produce new-make spirit. In Scotland and Ireland, the vessel used to ferment and hold the wash is called a washback (traditionally made of Oregon pine or stainless steel).

Washback
Equipment

The large fermentation vessel in which the wort (sugar-rich liquid from mashed grain) is combined with yeast and left to ferment into wash. Traditionally made from Oregon pine or Douglas fir (which contribute lactic bacteria that add flavor complexity); modern distilleries often use stainless steel for hygiene and consistency. Some traditionalists argue wood washbacks contribute measurable flavor differences.

Worm Tub
Equipment

A traditional condenser consisting of a coiled copper pipe (the "worm") submerged in a wooden tub of cold water. Used by some traditional Scotch distilleries (Springbank, Mortlach, Glen Scotia). Worm tubs produce less reflux than modern shell-and-tube condensers, creating heavier, more sulfurous, "meaty" spirit that some enthusiasts prize for its complexity.

Y
Yeast
Science

The microorganism responsible for fermentation โ€” converting sugars to ethanol, carbon dioxide, and congeners. Yeast strain selection profoundly impacts flavor: different strains produce different ester (fruity) and other congener profiles. Four Roses uses two proprietary yeast strains (alongside five mash bills) to create 10 distinct whiskey recipes. Bourbon producers guard their yeast strains fiercely โ€” many date back generations.
