Irish Whiskey must be distilled and aged on the island of Ireland โ covering both the Republic of Ireland and Northern Ireland. Minimum maturation is 3 years in wooden casks (no size limit specified, unlike Scotch). Maximum distillation strength is 94.8% ABV. Minimum bottling strength is 40% ABV. Irish whiskey is often (though not legally required to be) triple-distilled, which contributes to its traditionally smooth character.
Single Pot Still is the only whiskey category in the world that mandates a mixture of both malted and unmalted barley in its mash bill. Historically, Irish distillers used unmalted barley to avoid a British malt tax โ but the resulting character was so distinctive it became Ireland's signature. The unmalted barley creates a spicy, creamy, oily, and fruit-forward texture found nowhere else.
